Quinoa Fried Rice



Found this goodie in a recipe book standing inline at the grocery store... It's AMAZING!

Loaded with veggies, kid-approved quinoa fried rice is perfect for either lunch or dinner!


Add snap peas for a sweet crunch.

Add cooked diced shrimp or chicken.

Use a frozen veggie mix if you're short on time!


Ingredients

  • 2 cups quinoa

  • 1 cup frozen mixed veggies

  • 3/4 cup peeled edamame

  • 1 red bell pepper, seeded and diced

  • 3/4 cup green onions, diced

  • 3 Tbsp Private Selection Sesame Teriyaki (found at Fry’s)

  • 3 Tbsp Liquid Aminos

  • 1 egg

  • 2 egg whites


Directions

  1. Place all ingredients in a large skillet

  2. Heat over high on stovetop, stirring constantly, cook until mixture is piping hot and eggs are scrambled and cooked.

  3. Garnish with sesame seeds or diced scallions, if desired.
