Quinoa Fried Rice

Found this goodie in a recipe book standing inline at the grocery store... It's AMAZING!
Loaded with veggies, kid-approved quinoa fried rice is perfect for either lunch or dinner!
Add snap peas for a sweet crunch.
Add cooked diced shrimp or chicken.
Use a frozen veggie mix if you're short on time!
Ingredients
2 cups quinoa
1 cup frozen mixed veggies
3/4 cup peeled edamame
1 red bell pepper, seeded and diced
3/4 cup green onions, diced
3 Tbsp Private Selection Sesame Teriyaki (found at Fry’s)
3 Tbsp Liquid Aminos
1 egg
2 egg whites
Directions
Place all ingredients in a large skillet
Heat over high on stovetop, stirring constantly, cook until mixture is piping hot and eggs are scrambled and cooked.
Garnish with sesame seeds or diced scallions, if desired.
