One Pan=Endless Opportunity - Balsamic Chicken & Veggies

Takes less than 30 minutes from start to finish,

and can make dinner for the entire family or 3-4 portioned meals for you!


  • 3 chicken breasts, diced into small pieces

  • 1 carrot, chopped

  • 1 zucchini, chopped

  • 1/2 cup brussels sprouts, sliced in half

  • 1 red pepper, chopped

  • 2 tbsp balsamic vinegar

  • 1 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 4 cloves garlic minced

  • 2 tsp Italian seasoning

  • 1/2 tsp each salt & pepper


  • Preheat oven to 450 F. Add the ingredients to a parchment-lined baking sheet and toss well to combine (you can also toss in a large bowl then add to baking sheet if that's easier).

  • Bake for 15 minutes, stirring halfway through, until veggies and chicken are fully cooked. Divide among meal prep bowls then serve and enjoy!
